Each time I prepare a batch of Gumbo or Étouffee, I
recall my youth in Orleans and St. Tammany Parishes. The smells
and flavor of Creole and Cajun cooking carry me there, from
the restaurants along Mississippi River at Decatur street, to
grandmas apartment blocks away in the French Quarter, to the old fishing shack I once called
home on the North Shore of the Pontchartrain.
